Regular dehydrators produce constant, unchanging heat, which can cause “case hardening.” Regular dehydrators create a dry surface with moisture trapped inside—the perfect environment for yeast, mold, and bacteria to grow. With Excalibur Hyperwave Fluctuation Technology, the temperature fluctuates up and down to prevent this from happening. As the air temperature fluctuates, moisture on the surface of the food evaporates; then, as the air temperature fluctuates down, the moisture inside moves to the dry surface. This keeps the food temperature low enough to keep enzymes active, but the air temperature gets high enough to dry out the food and overcome yeast, mold, and spoilage.
